Thai Cooking Tom Yam Goong
Spice & Sour Soup with Prawn
Spice&Sour Soup with Prawn is one of the most well known Thai dishes abroad, this is spicy,sour.little bit sweet and little salty and a very fragrant soup.An ideal accompaniment to another Thai dishes with rice.
Ingredients
- 400g prawns,peeled and deveined,live the tail
- 2 sticks lemongrass cut in to pieces about 1"
- 5 slices galangal thinly
- 5 kaffir lime leaves torn in to pieces
- 2 thai coriander leaves cut 1" long
- 3-10 small red chilles crushed
- 100g straw muschrooms cut in to half
- 2-3 tbsp. fish souce or to taste
- 2 tbsp. lime juice or to taste
- 1/2 teaspoon suger
- 1 tbsp reasted chilli paste"nam-pirk-pow"
- 3 tbsp. milk
- 3 cups chicken stock"use chicken bont boil with the water"
Preparation
Bring the stook to the boil, add lemon grass. galangal. prawns and mushrooms.Simmer for 3 minutes or until the prawns are cooked, then add lime juice, fish sauce and chillies, sugar, milk, roasted chilli..
Taste and add more lime or fish sauce if needed!
Add kaffir lime leaves and fresh coriander at the end.seave hot with rice .
Tip: Do not overcook the prawns because,they will become tough.
